Healthier Flapjacks

We made these at my after school club with the children and they were all voted ‘very yummy’ by the children and all the Mums and Dads collecting. I talked to the children in small groups about refined sugar and the benefits of using dried fruit instead to sweeten naturally, a few of them were not convinced until they tasted…

I don’t think many flapjack trays got all the way home for trying later.

Irresistible and healthy with no refined sugar. The recipe is flexible you can use figs, prunes instead of dates and try sweetening with a banana too. We added raisins and dark chocolate chips, or a spoon of cocoa powder to make them Chocolate Flapjacks! Enjoy …

Ingredients:

  1. 150g ready to eat stoned dates

  2. 100g butter

  3. 31/2 tablespoons of maple syrup or honey

  4. 50g raisins

  5. 150g porridge oats

  6. Process dates until finely chopped and sticking together

  7. Put butter, dates,and syrup into a saucepan and heat gently until butter melted and dates are blended.

  8. Add remaining ingredients and spoon into lined and greased tin

  9. Bake 170 for 15 -20 mins
