half a block of haloumi, chopped into 4mm slices grilled / 2 grilled chicken breasts sliced
1 little gem lettuce
1 ripe avocado
2 sticks celery
1 spring onion sliced finely
6 strawberries cut into sixths
fresh mint leaves torn into pieces
sprinkle of pink peppercorns to make it look pretty!

4 cherry tomatoes
2 tablespoons of extra virgin olive oil
1 tablespoon of balsamic vinegar
pinch of salt
Wash and dry the lettuce and place in a salad bowl.
slice the avocado, celery, spring onion and strawberries and arrange on top of the lettuce
Add the mint leaves, peppercorns and drizzle dressing.
You could also replace the strawberries with mango or pomegranate, choices are endless!
