Last night we hosted another successful evening of chocolate and cocktails. The chocolates were all canapés savoury and sweet.
I have written a blog recently about chocolate and cheese so click here for reading that and understanding what combinations work well.
Last night I talked about tasting chocolate and cheese and here are some tasting tips:
Start with savoury and then switch to sweet. The sweetness of chocolate can sometimes overwhelm the palate. So start with the cheese and then taste the chocolate. Start with the dark chocolate pairings and then move to milk chocolate.
Portion your Pairings. Chocolate is a strong taste and it can overwhelm the cheese. To avoid that, try about twice as much cheese and chocolate in order to fully appreciate the flavour profile of both.
Use the Very Best Quality. Chocolate and cheese are both very rich so a little bit goes a long way. Since you don’t need a ton of either to have fun tasting them, go ahead and get the good stuff.
Clear Your Palate. You’re combining two really strong flavours. We recommend having some water or a crusty baguette nearby to cleanse your palate between tastings.
Try swapping your grapes for some good quality, dark chocolate on your cheese board, starts everyone talking..
